Lethbridge has a customized Carlisle system which tracks our production. Each producer is processed in sequence and the carcasses are identified by bar code when they enter the processing area. These barcodes are monitored all the way through the process until the product goes into the carton. This allows us to trace a carton label back to the producer level.
